If i do it, then it gives back the error i mentioned. (it's the same with the non-beta steam client) Only installing / reinstalling a proper proton compatible game solves this problem, by fully downloading the whole 200+ MB big proton package.

j2luk, the latest Steam beta client (March 28) has the following in it's changelog. Might help with that issue. Hopefully this also means we won't have to manually download newer versions from the Tools menu anymore either.

• Fixed an issue where the Steam Client wouldn’t automatically update or download Proton before launching games through Steam Play
