Choosing the proper FS

Hi,

Imagine this hard drive configuration:

• Disk 1: 2TB 2.5 SATA SSD for all the partitions /, /home, /var, ...
• Disk 2: A very fast 256GB NVMe SSD used as a cache for Disk 1
• Disk 3: A 10TB 3.5 HDD used for incremental snapshot of Disk 1
• Encrypted /home et /var
• Disk 1, 2 and 3 are doubled for redundancy (RAID 1)

What would be the ideal File System to achieve this? I suppose ZFS might do it, but is there a better alternative.
