I would be deeply interested in this. I have a Pinebook Pro that can comfortably run Minecraft Java, but it'd be great to see if it could be made to run older x86/x86-64 games and which games would run decently/well

It is unfortunate they seem focused on legacy ARM ISA.

Box64 supports RISC-V proper.
