Disclaimer: as everyone else I'm just listing the things I'm using. I've removed ubuntu-desktop package and lots of others a long time ago and strongly believe packages can't be really chosen in a way that will suit everyone.
Probably ask user a few questions, like Firefox vs Chromium, Gedit vs Leafpad vs Kate, Totem vs VLC vs SMPlayer, Nautilus vs Nemo vs Thunar and so on. Installation iso will be huge though.
    • Web Browser: Firefox
    • Email Client: Thunderbird
    • Terminal: Terminator
    • File manager: Nemo
    • Basic Text Editor: Gedit
    • PDF Reader: Evince
    • Office Suite: LibreOffice
    • Video Player: SMPlayer
    • Music Player: Clementine
    • Photo Viewer: EOG
    • Screen recording: SimpleScreenRecorder

Agreed - given the switch to the Gnome environment, it makes sense to favour Gnome apps where reasonable... consistent look-and-feel is important to a distro that's big on usability, and they're not going to get that by assembling a grab-bag of apps using every toolkit under the sun. So there's no point in looking beyond Nautilus and Terminal and Evince and Gedit for those core apps.

But I do say "where reasonable". Epiphany is a decent little browser, but nobody in their right mind is going to choose it over Firefox or Chromium as the default browser for a mainstream distro. And Gnome hasn't had a decent native office suite for years, so Libre Office is the obvious choice there. Email / Calendar are a tricky one... Evolution is the Gnome default and a functional enough system, but it's also kind of clunky, and not seeing much improvement in recent years... maybe Geary or Thunderbird would offer a better default user experience?

I also agree to favouring Gnome's default apps most of the time. I'd also take Mozilla where possible. My main gripe is that SMplayer is KDE-based so will/should not be default but is the best hands down imo.
        • Web Browser: Firefox
        • Email Client: Thunderbird
        • Terminal: gnome-terminal
        • IDE: none/default (at work I use KDevelop though)
        • File manager: nautilus or something more stable
        • Basic Text Editor: gedit with plugins please!
        • IRC/Messaging Client: Is there a good one somewhere?
        • PDF Reader: evince
        • Office Suite: LibreOffice
        • Calendar: gnome-calendar
        • Video Player: anything that is based on GTK and MPlayer and does not suck completely
        • Music Player: no idea
        • Photo Viewer: default
        • Screen recording: default

SMplayer is not KDE based, is QT based, as is VLC.

Calculator, Jesus Christ, ask me the calculator I want! Use qalculate-gtk!

UPD: unless they already do, I'm on Archlinux. But last time I saw they used something primitive.

No... It defeats the purpose of bloated.

How many Ubuntu users compile their own kernel, or something else?
                      Not many

How many Ubuntu users code for an IDE to be included as default?
                      Not many

How many do actually need a Photoshop style app to do complex photo editing/manipulation, or made their own svg icons?
                      Not many

I didn't said to strip the whole desktop and only provide a shell. What I said is to include the basics: Video player with working (aka legal) codecs, optical disk burning/ripping, audio player, browser. That covers most of the stuff most people do with their computers on a daily basis.

Some setups (business) may require an email client so I understand if one is included. But I'm pretty sure more than half users have moved to online mail clients just for the flexibility.

For an office suite, also understand more people will actually use a local installed office, even more than email client. I moved to Google Drive & Google Apps a year ago due again to flexibility. Can view, edit my stuff at home, work, on the go independent of platform.
