I know someone will find a reason to be mad about this decision.

As an aficionado of six-pointed inline asterisks, I like what I see here.

I think it's fine, but Cantarell was a readable, distinctive font. I don't entirely see the purpose of moving away from it vs. improving it (maybe further expand coverage, make text and UI variants). Adwaita sans looks like a helvetica clone with some moderate readability improvements (Roboto ‘R’, slightly more open apertures on a couple things).

Dave Crossland absolutely hit it out of the park with Cantarell, which he originally designed during his MA.

I strongly dislike Gnome for various reasons, but I think this new font is fine & I would even say it was about time. Typography is very important to how people perceive a GUI/DE, even if they don't necessarily realize this..
As for readability, in my opinion this new adwaita? font is very good, similar to Amazon Ember in that regard.

What have they removed from Inter yet?

Remember how bad the out of the box font situation was in Linux ~20+ years ago? The whole pale grey font on grey background riced look still needs to die off in some distros, but at least the fonts themselves have gotten better.

Yes, used to look awful. KDE was the first where I really liked the UI font. KDE still looks good in that regards. Current font in Gnome looks okay in my opinion, but I wouldn't say great either. I'm looking forward to seeing how 48 looks with this new UI font.
