Go ahead and close this topic, it looks to be more on the windows boot loader side than on Ubuntu's side. I will continue to tinker around with it.

Are you not able to update the original post? I was just going to add some more information from boot-repair, just a bit unsure what course of action to take.
    Thanks

    Suggested repair: __________________________________________________ ____________

The default repair of the Boot-Repair utility would reinstall the grub-efi-amd64-signed of
    nvme0n1p2,
    using the following options: nvme0n1p1/boot/efi,
Additional repair would be performed: unhide-bootmenu-10s win-legacy-basic-fix use-standard-efi-file

Final advice in case of suggested repair: ______________________________________

Please do not forget to make your UEFI firmware boot on the The OS now in use - Ubuntu 20.10 CurrentSession entry (nvme0n1p1/efi/****/shim****.efi (**** will be updated in the final message) file) !
If your computer reboots directly into Windows, try to change the boot order in your UEFI firmware.

If your UEFI firmware does not allow to change the boot order, change the default boot entry of the Windows bootloader.
For example you can boot into Windows, then type the following command in an admin command prompt:
bcdedit /set {bootmgr} path \EFI\****\shim****.efi (**** will be updated in the final message)

Changing partition that windows was on.

I originally had two drives in system.
    1 500 GB M2 ssd
Main system drive running Ubuntu 20.10
    1 2 TB WD HD
    storage ext 4 1.4GB
500 GB windows. /dev/sda3 (original windows)

I have since cloned the windows partition to a new 512 GB M2 drive. (/dev/nvme1n1p1)
I cannot seem to figure out how to change what windows would consider the C drive. It keeps using the mechanical drive, not the newer m2 drive.

I just want to be able to boot windows to the new drive, and then delete original windows partition and extend that ext4 part to the whole drive.

    Thanks,
