I think of it like getting a car, then replacing each part by new ones. Would it be the same car or a new one?

It would be the same one. It happens all the time. In Pimp My Ride, cars would get total makeovers, sometimes even stripping the core, but they would never refer to them as "a new car". And the same goes for computers: there are modern extensions to some of the oldest tech (old Apple or Amiga computers, for example), sometimes even replacing older parts. But everyone still refers to it as "my Apple xyz" or "my Amiga xyz" instead of "my new Apple/Amiga".
