To be fair, I think their main reason to target USB is because it makes easy to use it on a PC that would normally have Windows on it, without doing dangerous things like re-partitioning the drive and setting up a dualboot.
As we all said, with modern flash drives you have plenty of space, and USB 3.0 is fast enough for most storage. There is no need to touch the hard drive at all.
