I gather Spice is still quite heavy bandwidth-wise and not very usable outside a LAN. RDP is much better in this respect.

I think an major, rather underestimated, missing feature is the general screen recording support. Nobody is able to show off the smooth Wayland experience in fancy 60fps YouTube videos
This could boost the general interest in Wayland IMHO. Support for proper remote desktop handling could tackle this problem as well I'll stay curious!
