btrfs would make sense as a default if it was decent at everything. But it isn't. It has pathological corner cases. Thus it doesn't make sense as a default.
I would suggest NILFS2. https://en.wikipedia.org/wiki/NILFS- Checksums for data and metadata
- 64-bit data structures, timestamps.
- Continuous Snapshotting
- Designed with an emphasis on Low Latency
