Of course you can use either/or along with keyboard shortcuts. Whatever floats your boat.

why to windows? can i go back to mac? no i can't because GNOME is poor imitation of Mac and have same problem and doesn't have anything related to UX, as someone tried to mention several post before.

Debian still has this old classical software in the archive https://packages.debian.org/sid/utils/pornview

Stop posting in GNOME threads then. This site loves clicks, and if people keep commenting and viewing GNOME stories, they'll keep getting posted.

How is this decluttered UX trend making things simpler or easier to use?

Where's the applications menu on here? Oh, move the mouse way up into the top left corner, of course.
How do I shut down? Oh... click on my name in the top-right corner... hadn't thought of that, silly me.
Where do I change the preferences for this program? Oh, hold Alt on the keyboard... now I see where the menu is.
How did you customise your toolbars like that? Ohhh, you can hold Ctrl when you right-click!

When functionality is hidden, how is anyone meant to figure out how to do these things, or realise they could even do this? Don't tell me documentation, nobody ever read that before, and you're trying to say this is simpler and easier?

Old-fashioned GUIs could be understood quickly by observing only what's visible, then seeing what happens when you click things with either mouse button. Even Alt key accelerators are learned quickly when letters in menus are underlined and someone naturally asks "what does that mean?"
